Buka Boxx Jollof Burrito

Ingredients:

  • 1 cup of cooked jollof rice

  • 1/2 cup of black beans, cooked and drained

  • 1/4 cup of diced bell peppers (red, green, and yellow)

  • 1/4 cup of diced onions

  • 1/4 cup of diced tomatoes

  • 2 tablespoons of tomato paste

  • 1 teaspoon of ground cumin

  • 1 teaspoon of ground paprika

  • 1/2 teaspoon of chili powder (adjust to your spice preference)

  • Flour tortillas

  • Sour cream and chopped cilantro for garnish (optional)

Instructions:

  1. In a skillet, heat some oil over medium heat. Add diced onions and bell peppers and sauté until softened.

  2. Stir in the diced tomatoes, tomato paste, ground cumin, ground paprika, and chili powder. Cook until the mixture thickens and the spices are well incorporated.

  3. Add the cooked jollof rice and black beans to the skillet. Stir well and cook for a few minutes to heat through.

  4. Warm the flour tortillas in a separate pan or microwave.

  5. Spoon the jollof rice and black bean mixture onto each tortilla.

  6. Roll the tortillas into burritos, folding in the sides as you go.

  7. Serve your Buka Box Jollof Burritos with a dollop of sour cream and a sprinkle of chopped cilantro, if desired.
