Zobo-Infused Popsicles:

Ingredients:

  • 2 cups of zobo (hibiscus) tea, cooled and sweetened to taste

  • 1/2 cup of diced pineapple

  • 1/2 cup of diced watermelon

  • 1/4 cup of fresh mint leaves

  • Popsicle molds and sticks

Instructions:

  1. Prepare a batch of zobo tea by boiling dried hibiscus petals with water and sweetening it with sugar or honey. Let it cool completely.

  2. In each popsicle mold, add a few pieces of diced pineapple and watermelon, along with a couple of fresh mint leaves.

  3. Pour the cooled zobo tea into the molds, filling them to the top.

  4. Place popsicle sticks into each mold.

  5. Freeze the popsicles for at least 4 hours or until they're completely frozen.

  6. To remove the popsicles from the molds, briefly run them under warm water.

  7. Enjoy the refreshing and uniquely Nigerian Zobo-Infused Popsicles on a hot day!
